Distance is the whole problem
Australia is the size of Europe with a fraction of the people, and almost all of them live around the edge. Coverage follows the population, which means the cities and the coastal routes are well served and the interior is a different proposition entirely. If your trip is Sydney, Melbourne and the coast, this is straightforward. If it involves genuine outback driving, plan for stretches with no signal from any network, on any plan.
